Grilled Zucchini, Red Peppers & Mushrooms

So what to do with grilled vegies when you get tired of the same-old? Add different ingredients!

Inspiration: Wanting something different to go w/ grilled lamb
Time: 30 minutes
Difficulty: Easy
Special Equipment: BBQ or broiler
Servings: 2

1 medium zucchini, slice lenghtwise into 1/4 inch strips
1 small red pepper seeded & sliced into strips
4-6 mushrooms sliced
Kosher salt & fresh ground black pepper
Olive oil
1-2 teaspoons lemon juice
1/4 to 1/2 cup crumbled feta cheese
Powdered sumac (or other Mediterranean spices)

Toss the vegetables in the oil and add salt & pepper to taste. Grill until done to your liking. Toss with lemon juice, feta & sumac. Serve warm or at room temperature.

I bet this would be really good on a loaf of crusty bread as a sandwich too!
